Amazing Angel Hair Pasta w/Bacon & Shrimp



ANGEL HAIR PASTA WITH BACON AND SHRIMP
(IN CREAMY LEMON ROSEMARY SAUCE)

 1⁄2 – 1 lb. bacon, fried (keep bacon drippings)
 3⁄4 cup chopped yellow onion
 1 yellow pepper, sliced
 1 red pepper, sliced
 2 garlic cloves, chopped
 1 cup cooked peas
 2 cups cooked fresh shrimp (large size – I buy frozen)
 1⁄2 pkg. angel hair pasta

Fry bacon and remove from pan to drain on paper towels. Remove all but 2 T. bacon drippings. Saute in frypan chopped onion, pepper strips. When softened, add fresh garlic and sauté for 1-2 minutes. Add cooked peas, thawed pre-cooked shrimp, and bacon pieces back into onion/pepper mixture and keep warmed.

Set aside. Make lemon sauce; keep warm. Make angel hair pasta according to pkg. directions. Break pasta in half before placing in boiling salted water. Drain and keep warm.

Creamy Rosemary Lemon Sauce:

 4 T. butter 2 tsp. lemon zest
 1⁄2 tsp. garlic salt
1⁄2 tsp. garlic salt
 1⁄4 cup flour
1⁄2 tsp. kosher salt
 1 1⁄2 cup canned chicken broth 1 T. sugar
 1 cup heavy cream 2 T. fresh parsley, chopped
 1⁄2 cup milk 1⁄2 tsp. fresh rosemary
 Fresh ground pepper, to taste
 4 T. fresh lemon juice

Melt butter in medium saucepan. Add flour and stir and cook for a minute to make a roux. Add chicken broth, cream and milk and stir to make smooth and creamy on medium heat.

When sauce is thickened, add lemon juice, lemon zest and rest of seasonings. Pour warm sauce over pasta and bacon/shrimp mixture to combine. Enjoy!

Note: Made up this recipe one night and love the bacon and shrimp and lemon combo!
